A little recipe action to get your tomato juices flowin'.

Southern Living as I understand..

2 lbs. assorted tomatoes, roughly chopped

1 small shallot, minced

3 garlic cloves, crushed

1/2 cup red wine vinegar

3 Tbsp. extra virgin olive oil

1 1/2 tsp. kosher salt

1/2 tsp. freshly ground black pepper

1 cup loosely packed fresh basil leaves

1/4 cup loosely packed Italian parsley leaves


Add the fresh herbs before serving, and let the rest sit for 1-24 hours before.

Also this sounds like a great base to work out a pepper sauce from as well.
 
It's actually very close to the base recipe I use for pasta sauces of all kinds! The one thing I always add to those is a half teaspoon of bicarbonate of soda instead of being tempted to use sugar, as sometimes a tomato based sauce can seem a little bit bitter..... oh and garlic, must have garlic!!
