Have you ever had to come up with a bread recipe for a family member ''wot aint got no teef '' translation for American friends '' who has a shortage of teeth '' ? I came across this one, and have used it for loaves, buns and pizza bases. It has worked out well every time so far, so I thought I'd share it.
Ingredients
3 cups strong bread flour
1 cup warm milk
1 large egg
1/4 cup sugar
2 1/4 teaspoon dried yeast
1 teaspoon salt
1/4 cup melted butter
Extra milk and egg for wash...
Prepare bread tin if using one by greasing or lining or both'
Method
Mix together warm milk, egg, sugar and yeast. Add flour and salt and mix with spatula to make dough. Leave covered for 20 minutes to rest, and then add the butter and work it into the dough. (I do this with my hands, and wear nitrile gloves like they have in the hospital) Cover again and rest for 20 minutes. Lift and fold the dough at least 12 times until it's smooth, and put it in a warmish place for 40 minutes to rise. Punch out the dough. For a large loaf, roll out the dough into a rectangle with one side the length of your bread tin and roll it out as thinly as you like, then roll it up and put it ready for the oven - covered for about 30 minutes. Alternatively, divide the mix into pieces - about 16 for small dinner rolls or less for bigger burger buns, roll each and pinch into shape. For this I use a baking tin 12 inches square. Cut into 4 for pizza bases, and roll into shape, bake two at a time on a flat, well buttered baking tray. Brush loaf or rolls with egg and milk before putting them in the oven, which should be preheated to 350 f, 180c, Gas mark 4. A loaf takes about 25 minutes - depending on your oven.
I made a batch the other day, and added some dried fruit, loads of mixed spice, and brown sugar instead of white ( a bit more sugar) just to experiment, and they were great - 16 fruity buns with some sugar on the glaze - good for the freezer !
