I’m on frost watch for my horseradish (Armoracia rusticana). Unlike most all other veggies in the garden, this one actually needs a couple of good frosts (not hard freezes) to enhance the flavor of the roots harvested. By waiting to harvest it until late fall after a couple of frosts, you can optimize the flavor using the frost to break down the cell walls in the roots, making them easier to dig up and considerably richer in flavor.
I’m growing my horseradish in HK containers which offer some magical protection from our near continuous 100 deg F days that last from early June through September. The plants shown below were started about this time last year and have gone through one winter and one full Texas summer.
It is strange to look forward to frosts, but for this horseradish, frost is a plus.
