Fried Okra! Finally!

One of my favorite things to eat, on this planet, is fried okra! It was one of my main motivators to putting a garden in because fresh is so much better than frozen. Earlier in the year, until this week actually, I didn't think we'd ever be able to save enough for a mess of fried okra. Well, this week something happened and it just started busting out!

Tonight, finally, I get to eat my first fresh fried okra in years and I couldn't be more excited about it. The only thing that might be made it better is if I was cooking a big ol' ribeye with it. Pork chops will have to do tonight though, and I'm fine with that too!

  • Calories: 35.2 cal
  • Carbohydrates: 7.22 grams (g)
  • Fiber: 4g
  • Protein: 3g
  • Fat: <1g
  • Vitamin B6: .3 milligrams (mg) or 18% of the Daily Value (DV)
  • Vitamin C: 26 mg, or 29% of the DV
  • Vitamin K: 64 micrograms (mcg), or 53% of the DV
  • Folate: 73.6 mcg or 18% of the DV
  • Magnesium: 57.6 mg or 14% of the DV
Perhaps more significant is its propensity to reduce blood sugar levels...great for type 2 diabetics.

One cup...LOL...during summer I probably average 6-7 cups a week. Love the stuff.
 
Yeah, we've been mowing it down so fast we don't have a single bag in the freezer. Next year we're definitely gonna have to plant more.
